Step One 

The first thing you need to do when making sushi rice is to prepare the rice. To do this you need to rinse the rice until the water of the rice runs clear.

There are a few ways to do this. For instance, you could use a strainer or even a colander and let the water run through it.

Or you could put the rice in a bowl, fill it with water and strain it out until the water is clear. 

After you have washed your rice, you need to let it dry. 

Step Two

Now it is time to cook the rice. In order to do this all you have to do is add the rice to the Instant Pot.

Then you should add the water into the instant pot. Give the water and rice a stir.

Make sure to seal the lid. Then using the rice setting to cook the rice.

Your Instant Pot should be on low pressure and cook for around 12 minutes.

Once the rice is done, you will want to let it sit in the Instant Pot until the pot naturally releases. This should take around 10 minutes.

Whilst you are waiting for the pressure to come naturally there are some other preparations you could do. In a bowl, mix the sugar, rice wine vinegar, salt, and white wine vinegar.

Once you have mixed them all together, place the mixture in a microwave and heat for about one minute. The aim is to dissolve the sugar, so if your microwave is particularly powerful then heat until the sugar has dissolved. 

Step Five

Now that you’ve finished with the mixture, you can remove the rice from the Instant Pot and place it in a glass bowl. The rice shouldn’t have any water remaining and should be really fluffy.

Use a wooden spoon to stir up the rice. Once you have done this, add the sugar-vinegar mixture to the rice.

Take the wooden spoon and slowly start to stir the mixture in. You don’t want to break up the rice. 

Step Six

If you are using the rice to make sushi rolls then all you have to do is wait until the rice is cool enough for you to work with. Once the rice is cool, you are free to enjoy it! 

Things To Keep In Mind

The first thing to remember is that you need to use a wooden spoon and a glass bowl so that your rice ends up fluffy. If you decide to use a metal spoon or a metal bowl then you are increasing your chance of damaging the rice.

This could result in your sushi rice being dense. 

Using a metal bowl would actually help to have the heat remain in the rice. This would change the consistency of the rice. 

Another thing is to remember to keep washing the rice until it runs clear. If the rice water is still cloudy this would affect the consistency of the rice when cooking.
